Recipe of the day--Classic Whoopie Pies!


I have never made a whoopie pie before so I thought I'd give it a shot today! They are incredibly easy to make! I started off the day planning on making a chocolate peanut butter whoopie pie, but my little cousin came down to help me and hates peanut butter so I changed it to a vanilla fluff filling. From start to finish it took about 45 minutes to make 2 dozen, which is not too bad at all!

Chocolate Cookie:

1 3/4 cup all purpose flour
3/4 cup cocoa powder (unsweetened)
1 1/2 tsp baking soda
1/2 tsp salt
1 Tb. butter (soft)
1/4 cup shortening
1/2 cup sugar
1/2 cup Light brown sugar
1 cup milk
1 egg
1 tsp vanilla extract




Set the oven to 375 degrees--add flour, cocoa, baking soda, and salt together in a bowl.
Paddle the butter and shortening together in a mixer, once it is light and fluffy add both sugars, then slowly add the egg. Once the egg is fully combined alternate adding the dry mixture with the milk and the vanilla extract.

I used a small scoop to scoop quarter sized rounds onto a parchment covered sheet pan. I placed them about 2 inches apart from one another because the rounds double in size when baking. I placed the sheet pans in the over for approx. 10 minutes, I took them out when they were soft but bounced back when you touch the tops.

Vanilla Filling:

1 cup butter (soft)
2 1/2 cups powdered sugar
1 jar of marshmallow fluff
2 tsp vanilla extract


I paddled the butter and sugar together in the mixer, then add the marshmallow fluff and vanilla extract and beat on high for 2-3 minutes.

I paired up the same sized cookies and I put one little scoop on 1 of the pairs, spread it out and put them together like a sandwich. Now they are ready to eat!!
